Your idea about getting kids to love their country underscores the point that children learn the values of the parents and that happens so naturally around the family dinner table.  You are so wise to understand that now.

When the idea for this blog was born we had no preconceived notions about how many ways we might assist families but your comments are the kind of thing that keeps Mother Connie getting out of bed and rushing to the computer every morning!

		<description><![CDATA[I am so happy to have stumbled onto this blog.  I love the recipes that I&#039;ve seen so far.

I just wanted to mention that I think you could substitute chicken or veggie broth for all or some of the butter to reduce the fat content.  And I bet that yogurt (which you can make yourself!) can be used instead of the sour cream.  Granted, the end product won&#039;t be as rich but many of us could use less rich food especially when it&#039;s not for special occassions.  :)

And you can make your own cornbread mix.  It&#039;s very simple - 1 cup cornmeal, 1 cup flour, 2 tsp baking powder, 1 tsp salt.  Stir it together with the corn ingredients and Voila!  If you want to use this mix to make cornbread, you just add 1 cup milk, 1 egg, and 3 tbsp oil.
